Let's talk about grilled cheese (sorry if you're lactose intolerant or a vegan!). Last night, I watched the movie 'Chef' with Jon Favreau and Sofía Vergara. Jon's character is, of course, the Chef. He makes a grilled cheese sandwich that he shares with his son. OMG. The outside was golden, the cheese was gooey and stringy when they cut/bit the sandwich, and the bread was almost crunchy. You could hear their teeth CRRRUUUUNNNNNNNCCCCHHHH when they bit into it. ~drool~
I'm surfing the internet to find the actual recipe (that is NOT in the form of a youtube video) so I can make one at home. Well, okay: two, because there is NO way I'm splitting that ooey-gooey deliciousness with DH!!
Cheddar, gruyere, brie, goat cheese, parmesan, Velveeta, Swiss... white, wheat, rye, pumpernickel, sourdough.... What's your bread and what cheese do you use? Pssssst... I'm a grilled cheese "purist" - if there's more than cheese and a condiment on that bread, it is NOT a grilled cheese - it's a SAMMICH!!!

Aniki - have you checked out Binging with Babish? It's on youtube. He takes recipes from movies and tv shows and recreates them. He did the pasta that Jon Favreau in Chef cooks for Scarlett Johansson but not sure if I've seen him do the grilled cheese. Also, while I'm on the topic of chefs on youtube, another good one is You Suck at Cooking. If I recall correctly, he does a grilled cheese video.

I love grilled cheese. I
I love grilled cheese. I will make it with any cheese and mutiple cheese types. I also like all the different types of bread! Mmmm, now I am hungry. When I was younger my step dad made a double decker grilled cheese. I'm still not sure how he did it. I'll have to ask him next time I visit because it was AMAZING!!!!!

I love them all and love them more on sourdough. Doesn't matter what kind of cheese.
You may call it a sammich but I also love open faced with cheddar and Jersey tomatoe slice on rye.
One of my other favorites is from a Cafe in Ocean City: Swiss, provolone, cheddar and brie on multigrain bread with honey mustard. Very crunchy

In fact I may just do that. I remember being a child and having grilled cheese and tomato soup for dinner on Fridays. ( That was back in the days when we never ate meat on Fridays). I also like a ham and cheese grilled sandwich.

I'm actually not a huge
I'm actually not a huge grilled cheese fan. And I love cheese and I love bread. Funny that.
Now, my issue is we have a local ice creamery that uses as local as possible ingredients and in small batches. And it's kinda pricey, but my g*d the ice cream. And they post pictures a couple times a week. And I LOOK at those pictures. A long time. Their hours are kind of wonky until summer starts so that saves me from buying it much at at least.

Glad you mentioned Velveeta because I would be embarrassed to admit otherwise, that I've tried many types of cheese in my grilled cheeses, and there is nothing better than just Velveeta with ketchup on the side.
And I once tried a grilled swiss cheese sandwich because that's what Holden Caulfield kept eating in Catcher in the Rye. It was great as well.

I’m with the others that have stated this is why I cannot be vegan.
My favorite way to enjoy a grilled cheese is a decadent artisan bread like sourdough, grilled on both sides in butter, 2 or 3 cheeses and locally made kimchi. The best topped with an over easy fried egg. Omg.

This is more of a grilled sandwich, but it is sooooo good! Butter the outside of two pieces of sturdy bread. Sourdough is awesome. Spread pesto over the insides. Layer with slices of mozarella, avocado, baby spinach and goat cheese. Then grill. Sooooo good!!

Smokey gouda on sourdough
... late to this thread & not really a cook, but my FAV grilled cheese sammich is Boar's Head Smokey Gouda on sliced sourdough bread from a local bakery.
I heard one of the local food trucks specializes in grilled cheese sammiches & need to check it out!
